The life of being a grad student, can be so overwhelming at times! This week, tonight is the ONLY night I will be at home. This makes for very interesting dinners – can we say in a hurry!?!?!? Wednesdays I teach piano and voice lessons, then I take a class at church. Last night, I was able to prepare this dinner quickly before my first lesson arrived. And when I was done teaching dinner was ready and I had just enough time to scarf down my food before heading to church. No joke – preparation took a whole – maybe 5 minutes?
Lemon Pepper Chicken with Red Potatoes
Boneless Skinless Chicken Breasts
Touch of Olive Oil
Mrs. Dash Lemon Pepper Seasoning (FYI – This seasoning has NO sodium!)
Coat pan with a touch of olive oil and place chicken breasts in baking dish. Cut potatoes and add to dish. Add lemon pepper seasoning to chicken only (unless you like lemon pepper seasoned potatoes – not me!). Add S & P to potatoes.
Bake in covered dish at 375 for 45 minutes.
I had someone ask me once about if my chicken came out dry for this particular dish. No way! Perfectly moist in my opinion. And plenty of leftovers for us – it’s a challenge to cook for just 2 people!!!
